SWEET AND SOUR CHICKEN

Ingredients (2 servings)

2 cups oil

½ lb chicken breast or thigh meat (cubed) *

1/2 cup pineapple chunks

1/4 cup carrots (sliced on bias)

1/4 cup onions (wedged)

1/4 cup green bell pepper (diced)

¼ cup your favorite crispy batter

4 tbsp Asian Menu™ Sweet & Sour Sauce
* Pre-battered/breaded chicken chunks can also be used. You can also substitute the chicken with beef, pork, shrimp, scallops or vegetables.
Preparing it (7 minutes)

Cut chicken into 1 inch cubes.

Remove excess water from chicken.

Coat chicken with batter.

Peel and slice carrots.

Cut onions into wedges.

Cut green bell peppers into 1 inch dice.
Cooking it (7 minutes)

Blanch, onions and green bell peppers into boiling water for 10 seconds.

Heat oil in fryer over high heat until hot (approx. 350°F)

Deep fry chicken until fully cooked and golden brown. Then remove from oil and set aside.

Heat Asian Menu™ Sweet and Sour Sauce in skillet or wok until bubbly hot.

Add vegetables, chicken and pineapple. Toss until sauce fully coats food.
