SESAME ENCRUSTED TUNA

Ingredients (1 serving)

2 oz Yellow fin tuna saku block

½ oz Sesame Garlic Sauce
-
½ oz Orange Ginger sauce
-
1 ½ oz heavy cream
-
Spring salad
-
Mandarin orange segments.
-
Black sesame seeds
-
White sesame seeds
Preparing it (5 minutes)

Cut tuna into 1”x1”x 1.5” then blot excess water with paper towel.

Roll in black & white sesame seed blend (25% black, 75% white).
Cooking it (5 minutes)

Heat 2 tbsp vegetable oil in pan to 300°F the sear each side of the tuna to brown the sesame seeds (no more than 20 seconds).

Use a sharp knife and slice into 3 pieces then skewer with flat bamboo skewer.

Serve on salad greens with mandarin orange segments.

Salad dressing – ½ oz Orange Ginger sauce, 1 oz heavy cream.
