SESAME ENCRUSTED TUNA

Ingredients (1 serving)

  • 2 oz Yellow fin tuna saku block 

  • ½ oz Sesame Garlic Sauce 

  • ½ oz Orange Ginger sauce 

  • 1 ½ oz heavy cream 

  • Spring salad 

  • Mandarin orange segments. 

  • Black sesame seeds 

  • White sesame seeds

Preparing it (5 minutes)

  1. Cut tuna into 1”x1”x 1.5” then blot excess water with paper towel.

  2. Roll in black & white sesame seed blend (25% black, 75% white).

Cooking it (5 minutes)

  1. Heat 2 tbsp vegetable oil in pan to 300°F the sear each side of the tuna to brown the  sesame seeds (no more than 20 seconds). 

  2. Use a sharp knife and slice into 3 pieces then skewer with flat bamboo skewer.

  3. Serve on salad greens with mandarin orange segments. 

  4. ½ oz Sesame Garlic sauce for dipping tuna 

  5. Salad dressing – ½ oz Orange Ginger sauce, 1 oz heavy cream.
