EGGPLANT WITH GARLIC SAUCE

Ingredients (2 servings)

1 medium eggplant

4 tbsp Asian Menu™ Sesame Garlic Sauce

1 stalk scallion
-
1 tbsp oil
Preparing it (3 minutes)

Peel skin off the eggplant.

Cut eggplant into cubes.

Dice scallions.
Cooking it (5 minutes)
-
Blanch eggplant in boiling water until slightly soft (approx. 15 seconds).

Heat oil in wok or skillet over high heat until hot (approx. 350°F).

Add eggplant and Asian Menu™ Sesame Garlic Sauce and stir fry until sauce fully coats eggplant.

Garnish with scallions.
